Air-Fried Bacalao (Salted Cod)

This is an adapted air fryer method for Bacalao, which is traditionally pan-fried, baked, or stewed. Air frying gives the bacalao a wonderfully crispy exterior while keeping the inside flaky and moist. It's a delicious and healthier alternative to traditional frying!

Ingredients

  • 🐟Salted Cod Fillets (Bacalao)(2 (about 6-8 oz each))
  • 🫒Olive Oil(1 tbsp)
  • 🧄Garlic Powder(1 tsp)
  • 🌶️Smoked Paprika(1/2 tsp)
  • 🧂Black Pepper(1/4 tsp)
  • 🌿Fresh Parsley (chopped)(for garnish)
  • 🍋Lemon Wedges(for serving)

Instructions

  1. 1.**Desalinate the Bacalao:** This is the most crucial step! Rinse the salted cod fillets under cold water. Place them in a large bowl filled with cold water and refrigerate for 24-48 hours, changing the water every 8-12 hours. The cod should no longer be excessively salty. Taste a small piece to ensure it's desalted to your liking.
  2. 2.**Prepare the Cod:** Once desalted, pat the bacalao fillets very dry with paper towels. This helps achieve a crispy exterior.
  3. 3.**Season the Cod:** In a small bowl, mix the olive oil, garlic powder, smoked paprika, and black pepper. Brush this mixture evenly over both sides of the bacalao fillets.
  4. 4.**Preheat Air Fryer:** Preheat your air fryer to 375°F (190°C) for 5 minutes.
  5. 5.**Air Fry:** Place the seasoned bacalao fillets in a single layer in the air fryer basket. Do not overcrowd. Cook for 12-15 minutes, flipping halfway through, until the fish is flaky and cooked through, and the exterior is golden and slightly crispy. Cooking time may vary depending on the thickness of your fillets.
