Air Fryer Raspberry Cupcakes
Deliciously moist cupcakes with a burst of raspberry flavor, all made in your air fryer!
Ingredients
- All-purpose flour(1 ½ cups)
- Granulated sugar(¾ cup)
- Baking powder(1 ½ teaspoons)
- Salt(¼ teaspoon)
- Unsalted butter, softened(½ cup (1 stick))
- Large egg(1)
- Milk(½ cup)
- Vanilla extract(1 teaspoon)
- Fresh or frozen raspberries(1 cup)
Instructions
- 1.Preheat your air fryer to 325°F (160°C).
- 2.Line a 6-cup muffin pan with paper liners or silicone cups. If your air fryer basket is small, you may need to bake in batches.
- 3.In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
- 4.In a separate large bowl, cream together the softened butter and egg until light and fluffy.
- 5.Gradually add the dry ingredients to the wet ingredients, alternating with the milk and vanilla extract, mixing until just combined. Do not overmix.
- 6.Gently fold in the raspberries.
- 7.Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
- 8.Carefully place the muffin pan into the air fryer basket. If your pan doesn't fit, you can use individual silicone cupcake liners directly in the basket.
- 9.Air fry for 15-18 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Cooking times may vary depending on your air fryer model.
- 10.Remove the cupcakes from the air fryer and let them cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
- 11.Frost with your favorite frosting once completely cooled. (Air fryer frosting not recommended... yet!)
