Air Fryer Raspberry Cupcakes

Deliciously moist cupcakes with a burst of raspberry flavor, all made in your air fryer!

Ingredients

  • All-purpose flour(1 ½ cups)
  • Granulated sugar(¾ cup)
  • Baking powder(1 ½ teaspoons)
  • Salt(¼ teaspoon)
  • Unsalted butter, softened(½ cup (1 stick))
  • Large egg(1)
  • Milk(½ cup)
  • Vanilla extract(1 teaspoon)
  • Fresh or frozen raspberries(1 cup)

Instructions

  1. 1.Preheat your air fryer to 325°F (160°C).
  2. 2.Line a 6-cup muffin pan with paper liners or silicone cups. If your air fryer basket is small, you may need to bake in batches.
  3. 3.In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
  4. 4.In a separate large bowl, cream together the softened butter and egg until light and fluffy.
  5. 5.Gradually add the dry ingredients to the wet ingredients, alternating with the milk and vanilla extract, mixing until just combined. Do not overmix.
  6. 6.Gently fold in the raspberries.
  7. 7.Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  8. 8.Carefully place the muffin pan into the air fryer basket. If your pan doesn't fit, you can use individual silicone cupcake liners directly in the basket.
  9. 9.Air fry for 15-18 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Cooking times may vary depending on your air fryer model.
  10. 10.Remove the cupcakes from the air fryer and let them cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
  11. 11.Frost with your favorite frosting once completely cooled. (Air fryer frosting not recommended... yet!)
