Air Fryer Salmon with Roasted Potatoes and Mushrooms
A delicious and healthy meal cooked entirely in the air fryer. Crispy salmon, tender potatoes, and earthy mushrooms come together for a quick and easy weeknight dinner.
Ingredients
- 🐟Salmon fillets(2 (6oz/170g each))
- 🥔Baby potatoes(1 lb (450g), halved or quartered)
- 🍄Cremini mushrooms(8 oz (225g), halved)
- 🫒Olive oil(2 tbsp)
- 🧄Garlic powder(1 tsp)
- 🌶️Paprika(1 tsp)
- 🌿Dried dill(1 tsp)
- 🧂Salt(to taste)
- 🌶️Black pepper(to taste)
- 🍋Lemon wedges(for serving)
Instructions
- 1.In a large bowl, toss the potatoes with 1 tablespoon of olive oil, ½ teaspoon garlic powder, ½ teaspoon paprika, salt, and pepper.
- 2.Place the seasoned potatoes in the air fryer basket in a single layer. Air fry at 375°F (190°C) for 10 minutes.
- 3.While the potatoes are cooking, toss the mushrooms with ½ tablespoon of olive oil, salt, and pepper.
- 4.After 10 minutes, add the seasoned mushrooms to the air fryer basket with the potatoes. Continue to air fry for another 5 minutes.
- 5.Pat the salmon fillets dry with a paper towel. Rub with the remaining ½ tablespoon of olive oil, ½ teaspoon garlic powder, ½ teaspoon paprika, dried dill, salt, and pepper.
- 6.Carefully add the salmon fillets to the air fryer basket with the potatoes and mushrooms. Air fry for 8-10 minutes, or until the salmon is cooked through and flakes easily with a fork.
- 7.Serve immediately with lemon wedges.
