Crispy Air Fryer Chicken and Zucchini

A super easy and delicious way to get your protein and veggies in, all thanks to the magic of the air fryer!

Ingredients

  • 🍗Boneless, skinless chicken breast(1 lb)
  • 🥒Zucchini(2 medium)
  • 🫒Olive oil(1 tbsp)
  • 🧄Garlic powder(1 tsp)
  • 🌶️Paprika(1 tsp)
  • 🧂Salt(1/2 tsp)
  • 🌶️Black pepper(1/4 tsp)

Instructions

  1. 1.Cut the chicken breast into 1-inch cubes. Slice the zucchini into 1/2-inch thick rounds or half-moons.
  2. 2.In a large bowl, combine the chicken and zucchini. Drizzle with olive oil and sprinkle with garlic powder, paprika, salt, and pepper. Toss to coat everything evenly.
  3. 3.Preheat your air fryer to 375°F (190°C) for 5 minutes.
  4. 4.Place the chicken and zucchini in a single layer in the air fryer basket. You may need to cook in batches depending on the size of your air fryer.
  5. 5.Cook for 15-18 minutes, shaking the basket halfway through, until the chicken is cooked through and the zucchini is tender-crisp.
